Ingredients

Serves 2

2 croissants
4 large eggs
4 tablespoons, crème fraîche
2 tablespoons, chives
2 pinches, salt
Pepper
0.7 oz butter

Directions

Ready in 20 min

  • Chop the chives finely.
  • Slice the croissants in half horizontally. Place in the toaster with the cut surface facing down and toast for 4 minutes on pastry mode. Make sure each croissant has ample space in the toaster—you may need to do two rounds of toasting, once for each croissant. 
  • Crack eggs into a bowl one by one and whisk with crème fraîche until combined. Add chives, salt, and pepper.
  • Melt butter in a frying pan, pour in the egg combination, and scramble lightly with a fork until desired consistency.
  • Fold the eggs into an omelet.
  • Place the eggs on the bottom half of the croissants and top with the other half.
