"One of my favorite breakfasts snacks is this toast. I always love to have something that is filling and delicious like this. At my bakery we make this bread that is full of nuts and seeds and is really healthy. It is really great toasted just by itself but I wanted something more that made people think of their youth. This is a more grown up PB&J but has the same feeling of satisfaction."

Amanda shares her personal recipe with BALMUDA. A thick slice of her bakery’s seed and nut bread with a generous spread of almond butter and homemade blackberry jam is, as Amanda calls it, a “grown-up PB&J” and a satisfying mid-day treat.

Ingredients

Serves 2

2 slices, seed and nut bread, or whole grain bread, cut thick
6 tablespoons, almond butter
4 tablespoons, blackberry jam

Blackberry Jam

4 pints, blackberries
1 tablespoon, lemon juice
3 tablespoons, sugar

Directions

Ready in 5 min

  • Toast the bread on sandwich mode for 4 minutes.
  • Thickly spread the almond butter across the toast and then top with blackberry jam.

Blackberry Jam

Quick recipe

  • Toss blackberries with lemon juice and sugar and let sit for 30 minutes.
  • Place into a saucepan and bring to a low boil. Stir and use the spoon to mash the berries.
  • Taste and add sugar if necessary. Remove from the heat once ready and let cool.
  • Store in the refrigerator for up to one week.
